Pistachios & Nutella are the key ingredients that upgrade this traditional Greek Vasilopita*
a New Year's festive cake that is embellished with a charm, thought to bring good luck to the person that it is served & finds it.

the BEST VASILOPITA recipe ever !!!
INGREDIENTS
325 grams of butter
265 grams of powdered sugar
4 large or 5 medium eggs
1/2 cup of milk
1/4 cup of rum or brandy
Juice & grated peel of 1 large orange
1/4 teaspoon of ground nutmeg
1/4 teaspoon of ground machlepi
1 vanilla pod sliced & beans removed
80 grams of ground unsalted nuts ( walnut or almond or pistachio)
450 grams of all-purpose flour
1 heaping tablespoon of baking powder
1 teaspoon of corn flour
INSTRUCTIONS
- pre-heat oven to 170 degrees Celsius & cut a piece of wax paper, wet it under running water, strain it & dress a medium cake pan letting it hang over the sides (this will help U unmold)
- mix the last three ingredients in a bowl & set aside
- whip the softened butter & sugar until light & fluffy
- add the grated orange peel & vanilla & nutmeg & machlepi
- add the eggs, one at a time, whipping after each addition & the the orange juice, milk & alcohol
- finally add the flour mixture & the ground nuts... Mixing only until combined
- pour mixture into the cake pan & don't forget to add a coin wrapped in aluminum foil before U place it in the oven to bake for approximately 45 minutes OR until a knife comes out clean when inserted in the middle of the cake
Or
- remove the cake & let cool
- garnish with Nutella or chocolate icing... icing sugar or vanilla spread... & don't forget that marmalade looks good too !!!
